Lactic acid bacteria produce different types of inhibitory compound that have a bactericidal effect. The compounds produced include metabolic end products, bacteriocins are antimicrobial peptides with antibiotic effect, hydrogen peroxides and numerous organic acids depending on their fermentation pathway. activity by lactic is diverse, comprising strains capable inhibiting Gram-positive micro-organisms to those affect only organism close general. With the growing concern over spread antibiotic-resistant microorganisms possibility current therapies becoming inefficient, it imperative find antibiotics alternatives. In food preservation, naturally occurring favoured chemical preservatives more reason why there should be holistic approach taking advantage bacteriocinogenic in medicine industry. This review focuses application bacteriocin industry, livestock medicine.
